Actually sisig is made in several ways. I don't eat the pig's head version either (not that i don't like it but i just prefer other kinds). The one I like is grilled beef chopped into little pieces instead of pig head meat. The important factor of sisig is meat plus the mix of onion, spicey peppers, and some vinegar and soysauce. It is my #1 choice of chow while drinkin with friends.
